

Here is another recipe that I have toyed with and you should too. Remember I don't really follow recipes, I like to mix them up and add things in, so if you want to send me your creations, feel free!
Polenta is essentially cornstarch and I used to think it was yucky, but here is how you can make it good. Oh yeah, this recipe is also good FOR YOU TOO! It's a win win situation.
Ingredients (amount varies on how many your making):
Polenta
garlic (a lot if you like, a little if your a wuss)
basil (fresh or dry)
sundried tomatoes (fresh and oily or dry)
cheese (I like goat cheese)
avacado
salt + pepper (and any other spices you would like)
Olive Oil (to fry, or you can bake your cakes to make them a tad healthier)
Process:
1) Chop up garlic, basil and sundried tomatoes and mix them with the polenta and add milk or water to polenta mix (whichever you prefer).
2) flatten the polenta into pancakes and either start frying them on the stove (with olive oil) or put them in the oven for about 25 min. at 350 F (flip them over at 12min.)
3) Once your polenta cakes are fried or baked place one down and smear some cheese on and add some avocado as well.
4) Place another polenta pancake on top and repeat process. You can do this as many times as you want but to keep them from falling over I recommend 4 cakes total per stake.
5) Garnish with a bit of basil, salt and pepper and voila!
You can serve them as appetizers and show off to your friends, or serve them as a main dish with a salad as a side.
